The Red Brick Collection: Crafted Cocktails Inspired by the University

The Pool Bar at Level 9, Hotel ICON, nestled between Hung Hom and Tsim Sha Tsui, is owned by The Hong Kong Polytechnic University. "The Red Brick Collection" Cocktail menu featuring seven unique crafted cocktails guides each guest in reliving the unforgettable moments of their days in the university.
 

Red Brick Memories

The Red ice cube made with roselle flowers represents PolyU's iconic red bricks. Blended with sweet apple juice, the tart-sweet flavor evokes a bittersweet recollection of campus life. PolyU students take pride in the university's red brick walls, seeing them as a symbol of their academic aspirations.

Umami Escape

Escape the hustle and bustle with this cocktail inspired by Japan, a popular student travel destination. A blend of sake, kombu, scallops, and wasabi, seasoned with soy sauce, evokes the umami flavours of Japanese cuisine.

Polytop

Before Hotel ICON, a restaurant lab called "Polytop" was an experimental space for aspiring hospitality students. This lime-infused cocktail embodies the bright anticipation of a freshman starting university.
