An internationally-renowned British chef with five MICHELIN Stars and two MICHELIN Green Stars to his name, Simon Rogan stands at the forefront of the farm-to-table movement in Hong Kong. His restaurant empire today spans nine award-winning establishments across two continents and continue to be recognized by their respective communities for their efforts in sustainability.
Academy by Simon Rogan was launched back in July 2021 with the aim of equipping culinary students with a unique hands-on learning experience to develop the skills needed for a successful career in hospitality. It was also conceived as a direct response to the ongoing staffing issues faced by the hospitality sector, with a mission to reignite passion for the industry and provide weight for those who choose to work within it.
To celebrate this year’s graduating class of apprentices at Academy by Simon Rogan, who were due to complete their 15-month course after a final graduation tour in Hong Kong, a special Academy by Simon Rogan takeover took place at Hotel ICON’s Bistro 1979 (a restaurant co-operated by Hotel ICON and the School of Hotel and Tourism Management (SHTM) of The Hong Kong Polytechnic University (PolyU) - from Wednesday 5th to Thursday 6th June 2023, organized in collaboration with SHTM intern. Danny Ho, Executive Chef of Hotel ICON and Ashley Salmon, Head Chef of Roganic Hong Kong, worked closely together with the students to make this event a possibility in Hong Kong.

Priced at HK$680+10% per person, the eight-course celebration menu featured dishes thoughtfully created and presented by Academy by Simon Rogan apprentices and Hotel ICON interns from PolyU SHTM. An optional non-alcoholic beverage pairing was available at an additional HK$280 per person.
